Day, 30, fills the void left by Liam Hughes, who confirmed his departure from the club earlier this week to join Worksop Town.
The former Guiseley forward was part of the Scarborough Athletic squad that won the Northern Premier League play-offs and secured promotion to National League North.
He previously scored 85 goals in 107 games for Bridlington Town and had spells at Tadcaster Albion and Alfreton Town.
Former Grantham Town ‘keeper Pollard, 23, comes in to fill what had become a problem position for Matlock at times last season.
They used a number of goalkeepers during the campaign, and have confirmed that two of those - Paul Cooper and Shaun Rowley - have now left the club, as well as the expiry of Joe Young’s loan deal.
Pollard had a spell at Sheffield United as a youngster and had a season at Barrow.
Meanwhile, Ryan Qualter has been appointed Matlock club captain following the departure of Hughes.
Kayde Coppin will also become player/assistant manager after Dave Wild left the club.
